Friday night, We wanted to make a yummy family dinner. Jorge, Amy, and Ashley were going to the movies later and instead of the usual popcorn and skittle combo, we decided to take the healthier route and go with some spinach stuffed pork chops. mmmm....We took 4 lean pork chops (without the bone) and pounded them out to be really thin.
Then we took about 1 lb of spinach and cooked it down in some olive oil. 
Once the spinach cooked down, we added salt, pepper, a tbsp of course ground mustard, 1 jalapeno chopped with the seeds and membrane removed, 1 tsp cumin, and 1 drained and rinsed can of northern white beans. Let that cook together for about 15 minutes.
Then take the mixture and put about 2 good spoonfuls on the pork. Roll up and put on a broiler pan seam side down. Let cook in the broiler for about 15 minutes, until golden brown and cooked through. At the last minute, we topped with some happy cow cheese, at Jorge's request. :)

We served them with some steamed broccoli and white rice. Delicious! (Plus Star Track was even better without the distraction of "Pass the Popcorn!") :)
